Sourdough ciabatta

Ciabatta has been one of my favourite bakes since I first started baking sourdough bread.
But not every time I could get the big air pockets inside.
I thought maybe I didn't put enough olive oil.

Until one time I found a recipe that doesn't involve oil at all. 
Only bread flour, water and salt.

I tried this recipe for a few times, and now I think I'm getting it quite right. :)
It's 85%  hydration, by the way.
