Sourdough shio pan
I attended shio pan and brioche baking workshop last year, but I didn't try making one until today.
I used my usual sandwich loaf recipe for the dough, which is egg free and dairy free, then a small piece of real butter to roll inside the dough. So it's not fully vegan.
Rolling the dough was the fun part.
I applied soy milk instead of egg wash on top, then sprinkled some coarse sea salt on top.
Yummy! I love it!
